Aroma
Notes of flint, lemon verbena, wax, white flower and green melon.
Palate
Lovely clarity and zing through the palate. Lemongrass with hints of mint and green melon. Light notes of dough and toast emerge through the waxy mid-palate. Acidity provides laser-like focus. Finish has mouth-watering minerality with the oak providing a light textural component to offset the acidity.
Whole bunch pressed to new and one year old French oak puncheons. Half inoculated, half wild ferment. Fermented cool for 20 days. Aged for twelve months on gross lees with bâtonnage performed once per month. Racked to stainless steel with full lees and left untouched for a further six months. Lightly fined and filtered prior to bottling.
Maturation
12 months in new and one year old French oak puncheons, six months in stainless steel.

Massive, dense and concentrated, with espresso, dark chocolate and dried herb flavors that work with the wall of dense tannins and the concentrated flavors of cassis and blackberry. Remains tight, with gravelly tannins on the finish, showing glimpses of a terrific wine that needs time to unwind. Best after 2020.
